Say It – Cheelaay Keelay

The recipe is called Chilaquiles but around our house it’s pronounced as noted above.  It’s from the very excellent Quick Vegetarian Pleasures by Jeanne Lemlin.  It won the James Beard Cookbook of the Year Award and boy! does it deserve it.  We cook out of it at least three times a week.

Now…to the recipe!

1 1/2 TBspn olive oil

2 onions, finely chopped

2 garlic cloves, pressed / minced / macerated

1 28-oz can tomatoes finely chopped in their juice (is that even kosher?)

1 16-oz can kidney beans, rinsed and drained

1 14-oz can mild green chiles, minced and drained

12 corn tortillas

1 cup sour cream

2 1/2 cups shredded Monterey Jack cheese

1. Preheat the oven to 350 degrees.  Heat the oil in a large skillet over medium-high heat, add the onions and garlic, sauté 10 minutes, or until the onions are tender.

2. Stir in the tomatoes and juice, kidney beans, and chiles.  Boil 5 minutes, stirring occasionally, until the juices begin to thicken.  Remove from the heat.

3. Spread half the sauce in a 10 x 10 x 2 inch casserole.  Top with half the tortilla strips, half the sour cream, and half the cheese.  Complete with the remaining tortillas, then the remaining sauce, sour cream, and cheese.

4. Bake 35 mintues or until hot, dreamy and bubbly.

DNark Hangs It Up

DNark waves goodbye.

I just caught this story at Gazettenet.com about Ward 4 City Council David Narkewicz (freakin’ sub. req’d.) not re-upping for his position this year.

From the article:

The 42-year-old, a stay-at-home dad who says “domestic engineer” will remain one of his main job titles, ruled out a run for any elected office this year.

“I don’t have any immediate plans, but I’m not going to rule out running for elected office in the future,” said Narkewicz.

That creaking sound you hear is the rumor mill slowly grinding in to action.

Prediction #1: He takes this campaign cycle off to ready himself, his family and his war chest for a run for Mayor in 2011.

Prediction #2: He takes this campaign cycle off to ready himself, his family and his war chest for a run for Elector of the Oliver Smith Will.  No doubt it means practicing walking around wearing a sash, top hat and monocle.

Prediction #3: He goes all Tacy on us and pulls out write-in papers for Mayor right before the deadline this year and stops paying his taxes.

Start Up the Bake Sales

Northampton School Superintendent and fashion plate (C’mon!  Those coordinated suits are the highlight of every school committee meeting) Isabelina Rodriguez announced an almost $3 million budget gap (sub. req’d. [enough already Gazette]) in  next year’s school budget.

It all would have been fine with a level-funded budget had the Mayor not asked for a 12% reduction due to the city’s own budget shortfall of $6M.  Thwarted.

So here’s who ended up on the cutting room floor:

  • 23 teachers and 4 aides across all four elementary schools
  • 11 teachers at JFK Middle School
  • 14 teachers at Northampton High

What will also be cut way back is busing.  Before, kids who paid for passes could ride the bus through twelfth grade, if I’m understanding the information correctly.  Now it’s been pushed back to the state mandatory minimum only for kindergarteners through sixth graders.  Superintendent Rodriguez clarified further that would mean seventh through twelfth graders would not be bused.  Again, if I’m understanding it correctly, that is a rather dire set up.

What also went into a different part of the budget meaning it was moved from allocated funds to revolving funds was stipends that pay for coaches and teachers who lead extra-curriculars afterschool.  This was immediately interpreted as sports and extracurriculars were being cut.  Not the case, Rodridguez said, just the funding of these posts.  She’s hoping that booster clubs will form to take up the costs.

I’m still a little unclear as to what this means.  I know the stipends of the coaches and teachers will be put out to booster clubs but does this also mean transportation to and from practices and games, rehearsals and the like?  Also how does equipment and uniforms figure in to this?  Any clarification would be much appreciated.

Also, if there are no boosters or boosters but still not enough funding, does this mean the activity is…cut?

Bleak times are ahead for our schools, friends.  It’s been bad before but having to cut close to 50 teachers across the school system is Brontë sisters depressing.

Having spent the last year covering school committee meetings for WHMP, I will say the committee is very responsive to parents that show up to speak during the public comment.  They truly seem to take a keen interest and listen intently to the concerns of those who show up to speak their minds.

Here’s the list of upcoming meetings.  They begin at 7:15pm and are in the community meeting room of JFK Middle School on Bridge Rd., the school that’s getting eleven teacher positions cut.

Asking For It

I’m not going to full out say which downtown Northampton bank has this switch out in full view and finger’s reach.  I need to keep some element of challenge involved.  But I will say it starts with TD and ends in Banknorth.  Where do you think it goes to?  Is it the switch for the big bank vault door?  Interest rates?  The switch that keeps cash from flying out of the ATM?  I was too chicken to touch it.

So asking for it.

But I feel like someone should.  Tell me when you’re doing it so I can come and watch from behind the potted ficus.

Cheap Eats for Thurs., 3/11

A smart friend of mine called me and said, “You should write about cheap places to eat in town.”  OK.

It’s that easy to persuade me.  I guess I’m just lucky he didn’t say, “You should send me your SSN and mother’s maiden name.”  OK.

Today I think the best cheapest eat is the 3-courses for 20 bucks deal at Spoleto. If I’m understanding the Web site correctly, it’s not even a separate menu.  Aside from some items that have an upcharge attached to them, you otherwise have the entire Spoleto to choose from.

PLUS!  I see they added back my favorite item from the older Spoleto days, chicken and sausage bow tie pasta!  Holy Hell is that ever delicious.  The chicken is cut up into bite-sized morsels, the sausage is lightly spicy and ground up.  THEN, then…this is the best part, the snap of those green peas and their  lingering sweetness on the palette is combined with a light tomato cream sauce and then tossed with tender bow tie pasta.  And the thought of getting that with the garden salad topped with the always delicious creamy fresh herb dressing and a mixed berry sorbet for twenty bucks is just a healing balm during these dark economic days.

I hope more restaurants follow Claudio’s suit.  We’ve stopped spending.  Okay, I’ll speak for myself.  I’ve stopped spending.  But I’m not alone.  I can’t afford to go out the way I used to.  No way.  So it’s nice to have the incentive of a great meal at a more affordable price right now.  I’m sure restaurants are feeling the pinch now too and they need to bring us diners in more than ever.  Deals like this create the feeling that we don’t have to wait for that special occasion.

For the price and deliciousness and overall eating experience, I rate this cheap eat four out of five empty wallets.

I’m Thinking Fennel.

My friend Rosie came up with a fabulous idea, fennel-infused vodka.  Think of it.  On a hot, humid summer day, a cold rocks glass of ever-so-lightly licorice-flavored vodka over ice.

I looked up “how to infuse vodka” and found this handy step-by-step guide on wikiHow:

  1. Choose a flavor. Decide how you want your vodka to taste, and get plenty of the desired fruits, berries, peppers or herbs.
    • If infusing fruit, use 1-3 good sized pieces.
    • If infusing herbs, use 1-2 fists filled of the herb (depending upon the potency of the herb).
    • If infusing berries, use 2-4 fists filled with the berries. You may also want to bruise (squish a little) them first.
    • If infusing peppers, use as many as you want. The more you use and the longer you infuse, the spicier the vodka will be.
  2. Preparation. Wash and slice the fruits (this will speed up infusion by increasing surface area). However, leave berries whole after removing any stems or leaves. Place all of your ingredients together in an airtight sealed container. The relative proportions of each ingredient (if you’re using more than one) are a matter of personal preference.
  3. Infuse! Fill the container with vodka, seal it, and put it some place safe and away from direct sunlight.

So I’m thinking, grab a bulb of fennel.  Cut it in half and stuff it into the container with the vodka.

As it’s barely above forty degrees today, we’re still working on our dark liquors but I can’t wait to try this come May.

PaintBox at the Shea in TF

PaintBox Theater is usually a summertime indulgence. But this Saturday the 14th, we mix it up a bit bringing PaintBox Theater’s “The Great Race of the Tortoise and the Hare” to the Shea Theater in Turners Falls. Come for the 2pm show and get some lunch or an early supper at the awesome Voo before or after.

I play Hyacinth Hare, athlete, champion, and energy drink shill. For old times’ sake and to get familiar with the set again, I’m watching videos I made last year during rehearsal.

Rye, I Oughta

Bob Heiss is a foodie savant. He and his wife Mary Lou own Cooks Shop Here on King Street. It’s a must-stop in. Even if you don’t think you’re a foodie (foody? Jim Foudy?) they have an impressive rack of candy worth a visit right inside the door.

Bob hosts a weekly radio show I produce called Off the Burner (podcasts of it available for a listen here) on Saturdays at 9:30am. This week he talks about the spirit rye and its importance in the cocktail of New Orleans, perhaps the first American cocktail, the sazerac. The guy is a thoughtful host because for the taping he brought along the ingredients for me to taste my first sazerac.

Here they are:
2 oz. rye (or brandy – the original is brandy, but the traditional recipe calls for rye)
3 shakes of Peychaud’s bitters
A shake of Angostura’s bitters
A mist of lemon oil from the thin rind of a lemon
pastis (an anise-flavored liquer)

(The pastis is a mediocre replacement for absinthe. Rumor has it wormwood-free absinthe is available out there so if that’s the case, have at it with the absinthe.)

Put all the elements into a cocktail shaker containing three ice cubes. GENTLY stir the contents, DO NOT SHAKE. And then pour into the pastis-coated rocks glass.

It’s a lovely sipping cocktail. And rye is all the rage right now. Even Anchor Steam Brewing Company got into the mix with their Old Portrero 18th Century Style Whiskey.

A City Speaks

I just received the Mayor’s latest E-mail newsletter. (I highly recommend receiving it. She doesn’t send out too many, hasn’t sold my address to any spammers…yet – could be something to consider as the city steels itself for a $6 million budget deficit, and includes some interesting information in it. Add your E-mail and click the box for it here on the left.)

What I learned in the latest edition is the existence of a new Web page on the city’s site called the City Speaks. This is where the Mayor’s Office is posting ideas sent in by city residents and employees to help bridge the ginormous gaping maw of a deficit expected in fiscal year 2010.

According to Karen Bellavance-Grace of the Mayor’s office, they’ve received so many ideas she needs to add another page. So far the ideas include consolidating spending among departments (answer pending), closing school buildings at 5pm (fine as long as there aren’t any other council meetings happening), and instituting wage freezes (already happening with non-union jobs and posed to unions as something to consider). The ideas are posted and then answers are provided as to the their feasibility.

It’s a worthwhile read to be sure. But I’d like to see more…inventive ideas thrown up there. As we’re learning more and more often in these bleak economic times, the old systems, the way we used to do things just won’t cut it. I say set loose your imagination, unlock the top of your head, and let’s see what crazy notions help us navigate out of this dark night of the economic soul.
